How can i edit the masks?

Just click the mask in the layers panel, click "B" for brush tool. Black brush hides while white reveals content.

Double click the gradient in the layers panel and move the color sliders, or pick your own colors.

How can i edit social media cheat sheet?

As explained in the video tutorial, choose your social network, open the folder you want, double click the smart object you want to edit and delete the text. After that, chose the banner you want, paste it in and scale it up to fit. When you are ready to save, just go to FILE / SAVE AS and then choose format from the drop down menu, and the location you want to save it to. After that, just click SAVE.
